Berry Smooth(ie) Muffins


The other day my husband bought a Bolthouse Farms Strawberry Banana Smoothie but forgot it in his truck and it sat in the sun for longer than we figured was safe, health wise. However, being the type of person who hates to see things go to waste, I said I'd make muffins with it. Now, I don't typically follow recipes and sometimes it ends up being something that, while edible and not too bad, isn't something I want to make again, at least not exactly the same. Sometimes though, it turns out so well that I need to try to remember what I put in and write it down after making it. These muffins were so good that I made more the next day with the recipe I wrote.



Berry Smooth(ie) Muffins
Makes 12
Pre-heat oven to 350 degrees celsius. Grease a muffin pan.

Dry Ingredients

3 cups flour (I used all purpose white)
1/2 cup white sugar  
2 tsp baking soda
1.5 tsp baking powder
1 tsp salt

Wet Ingredients

2 cups Bolthouse Farms Strawberry Banana smoothie
1 egg (large)
2 tsp vanilla
1/2 cup cooking oil

3 large handfuls of blueberries (to taste/preference really) (optional)

Mix dry ingredients. 
In another bowl whisk wet ingredients together. Pour wet into dry. Mix until just combined. Add blueberries. Fill muffin cups. Bake in oven at 350 for 15 minutes (or until knife comes out clean).

Kitchen Renovations

In October we redid the counters in our kitchen (I know, I'm slow on this). Today my husband is working on replacing the tub in the bathroom and it reminded me that I wanted to put my kitchen renovations on here so...

Here's why we needed it replaced:


Plus, I just didn't like the white and gold fleck counters from decades ago.
We probably should have emptied the cupboards first but we didn't so I had to wash everything in the cupboards after it was done.

And apparently there is no picture of the finished kitchen...
And I'm not taking one now because the counters are littered with last night's supper dishes and this morning's breakfast dishes. And the water is off so hubby can do the tub.
I'll try to remember to get one up with the bathroom reno pictures.

Chicken Cordon Bleu

I started by slicing black forest ham and then swiss cheese into thin slices. (No pictures)

Next I mixed up some coating for the chicken.

 Then I sliced the chicken breasts and laid them out.
 Layered on the ham
 and the cheese
 Rolled them up (ended up more just folding them in half) and breaded them


 Placed them on a baking sheet and into the oven (425 for 30 minutes)


 Served with egg noodles, white pea sauce and cauliflower

I wish I had taken a picture of my husband taking his first bite.
 It was a hit!

Mother's Day 2013


I had the best Mother's day weekend yet! We didn't do anything super special but we just had a wonderful time.
We went for a little hike on Saturday. It's all I asked for for Mother's day.

 After our hike we had to go into town for a bit. They bought me flowers.
 And strawberries (and whip cream) which they gave me Sunday morning.
